Recipe Fried Chicken Taco


Makes 4 


4 each 5 inch corn tortilla

1 big chicken cutlet cut into 4 pieces

1 cup seasoned bread crumbs, granulated garlic, granulated onion, smoked paprika, sea salt, cumin, fresh cilantro

flour and egg to bread the chicken



1-    season the chicken with seasalt and then dredge in the seasoned bread crumbs

2-    cook the chicken in peanut oil or soy oil, 350 degrees, for 3 minutes till done, remove and reserve on a paper towel until we make the taco


For the garnish


 ½ cup diced fresh watermelon, yellow and red if you can

 2 each scallions, sliced

2 tablespoons diced jicama

3 fingers of fresh mint

1 tablespoon of jalapeno simple syrup  (1 part water, 1 part sugar cook for 5 minutes, add jalapeno and let store in fridge, great for food and spicy margaritas)


Chipotle Ranch

  1 cup ranch dressing

   1 tablespoon of chipotle pepper in adobo

  juice of 1 lime

  seasalt and pepper

  blend and taste and season


To Assemble


1-    warm the tortilla on a flat top of some kind

2-    dress with the chipotle ranch dressing, to cover the tortilla lightly

3-    add the chicken

4-    toss all the garnish in a bowl and season with seasalt and pepper

5-    garnish with fresh mint
