Grilled Lamb Loin with Yogurt Sauce


2 each 6-8 oz lamb loin, cleaned of all fat and sinew

1 teaspoon toasted ground coriander

1 teaspoon toasted ground cumin

1 teaspoon toasted ground fennel seed

1 teaspoon toasted ground mustard seed

***use a coffee grinder to grind the spices***

1 teaspoon sea salt

1 teaspoon smoked paprika

3 teaspoon brown sugar


Yogurt Sauce

1 cup strained Greek yogurt

1 bunch fresh mint

1 bunch fresh dill

1 tablespoon chopped fresh garlic

1 teaspoon black pepper

1 teaspoon lemon zest



1-   ombine all the spices and salt and sugar and season the lamb loin

2-    on a hot grill, or in a pan with soy oil cook for 4 minutes a side and then remove from heat

3-    let the lamb rest for 8 minutes and slice ready to eat


For the Yogurt:

1-    For the sauce, combine all the yogurt ingredients and have ready for service.


Serve with chopped fresh tomato, dressed with white balsamic vinegar, EVO, fresh mint and chopped fresh scallions



Also good with some great Greek Pita.  Make a sandwich and enjoy
