2 pounds shrimp  peeled and cleaned.

2 each jalapeno

2 tablespoon garlic

1 bunch cilantro

1 each shallot

½ cup tequila blanco

2 tablespoon butter

Salt, pepper, toasted cumin seed ground

1 cup queso fresco

1 pint cherry tomato

1 each avocado

Juice of two limes..



  1. season shrimp and cook in sautee pan with olive oil
  2. flip, add garlic, shallot, jalapeno
  3. deglaze with tequila and return to fire
  4. add butter, chopped tomato and return to fire for one minute
  5. add chopped avocado, remove from fire and add cilantro and lime
  6. pour oven warm tortilla chips, top with queso fresco and enjoy!!
