Spanish Style Paella 

1 each Spanish onion, diced 

4 stalks celery, diced 

1 pound chorizo sausage, out of casing 

1 tablespoon garlic, chopped 

1 each red pepper, diced and seeded 

1 each green pepper, diced and seeded 

3 bunches green onion, sliced 

2 pounds, boneless , skinless chicken thighs 

2 pounds, clean shrimp 

2 each lobster tail 

1 quart of rice 

2 quarts of chicken stock 

1 teaspoon (scant ) saffron ( SIMMERED IN THE STOCK) 

¼ stick butter, unsalted. 



1- In a big pot, sautee the onion, celery and garlic 

2- When cooked translucent, add the chorizo and brown 

3- Add the diced chicken and brown ( season each step with sea salt and black pepper) 

4- Cover with rice and stir 

5- Cover with hot stock 

6- Bring to a small simmer and cover with foil and put in oven at 325 for 20 minutes 

7- Remove from oven and add the shrimp and lobster and cover and replace in oven 

8- Remove from oven and stir in the peppers and cover, leaving on countertop for 8 minutes 


9- Stir in ¼ stick butter, season with sea salt and black pepper and enjoy with Rioja!!
