The Clam Pie is the pride of Conneticuit. This is the official pizza of U Conn

  • 24 each fresh shucked middleneck clams
  • 3 tablespoons fresh strained ricotta cheese
  • 1 teaspoon fresh chopped garlic
  • 4 tablespoons oreganata bread crumbs
  • 2 oz EVO
  • 4 ozs parmesan cheese
  • 6 ozs part skim shredded mozzarella
  • 1 tablespoon chopped fresh parsley
  • 1 teaspoon crushed red pepper
  • 1 8 oz pizza dough



  1. stretch the dough out and roll with a rolling pin till it is ½ inch thick and place on a pizza peel (wooden) to assemble before placing in oven on a pizza stone in the hottest oven you have
  2. on the dough first spread the mozzarella, then add spread the clams, making sure not to let to much clam juice wet the pie
  3. dollop the ricotta and dust with the parmesan
  4. dust the red pepper and oreganata bread crumbs
  5. brush the crust with ½ the olive oil and bake in oven 10 minutes or so at the 550+ degree temp in your oven
  6. make sure to rotate the pie
  7. remove and check the bottom to make sure the crust is cooked golden brown
  8. if done, let rest for two minutes, sprinkle the parsley and brush the remainder of the oil on the crust
  9. eat and serve with cold beer
