Pagano's Potato Latkes

Ingredients:

  • 1 pound potato
  • 1 each Spanish onion
  • 2 eggs. Beaten
  • 1/2 cup flour
  • 1 teaspoon baking powder
  • Salt
  • Oil for frying. I like grape seed

Method:

1- using food processor or handheld grater grate the onion and potato

2- place both ingredients, in batches and squeeze out all the moisture

3- place in mixing bowl, add rest of ingredients and mix lightly

4- hear non stick pan , add oil and form potatoes into pancakes, thick enough to be nice to eat, but not too thick as to not cook

5 - cook in pan. Till Golden brown, about 4-5 minutes a side on medium heat

6- remove to cookie sheet with rack and place in oven at 250 degrees so as to stay hot

7- server it up with Applesauce or sour cream, chives and some smoked salmon
