Grilled Lamb Chop Gyros
8 each Lamb Chops, Frenched bone
1 tablespoon chopped fresh garlic
1 teaspoon ground sumac
1 tablespoon chopped fresh mint
Cracked black pepper
Olive oil
4 nice sized fresh thick PITA
For Yogurt Sauce
8 ozs strained yogurt
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh mint
Granulated garlic
Granulated onion
Salt/pepper
Lemon juice
For Gyro
Chopped cucumbers, tomatoes, fresh mint, red onions, pepperoncini peppers, feta cheese, EVO and red wine vinegar
To cook:
Marinade the lamp chops for 8 hours or overnight
Lightly toast the pita and then wipe the yogurt sauce on the pita
Grill till medium rare, let rest and cut off the bone and lay in the Pita
