STEAK AND MUSHROOM TACO
1 pound skirt steak, trimmed and cleaned and ready to cook
1 tablespoon ground dried porcini mushroom
2 tablespoons soft butter
1 tablespoon shallot, diced
2 ears of corn, shucked
2 cups sliced crimini mushrooms
1 teaspoon chopped fresh garlic
2 tablespoons c hopped fresh cilantro
½ cup grated cojita or parmesan cheese
6 each flour or corn tortilla, which ever you like…

Method:
Grind the porcini mushrooms in a coffee grinder and dust the meat with ½
Season meat with salt and pepper and olive oil
Let marinate for as long as you have or one day
Cook till done
In a pan, at the same time, sautee in the ½ the butter, shallots, garlic and then add the corn and mushrooms
Deglaze with tequila
Slice steak and add to the pan
Add the cheese
Add the cilantro and remainder of butter
Place on warm taco tortilla
Dose with some hot sauce
