Oysters Rockefeller
1 pound chopped bacon
2 tablespoon chopped fresh onions
2 cups cooked chopped spinach
1 cup heavy cream
1 tablespoon chopped fresh garlic
3 oozes Sambuca Romana
8 oozes parmesan cheese
1 teaspoon ground toasted fennel seeds
12 oysters blue point oysters shucked.. no shells….
Method
In a large pan, heat and add the bacon and cook till done and all that good bacon fat is in the pan
Add the onions and garlic, toasted fennel seeds and let cook till tender
Add the Sambuca and let flame
Add the cream and the spinach and let reduce
Add the parmesan cheese and remove from heat
Shuck the oysters, top with the Rockefeller mix and broil at high heat
Cook till golden brown and serve them up
You can even serve the Rockefeller spinach as a side dish… instead of cream spinach... I do it all the time….
