Chicken Chimichiri Tostada


4 each corn tostada tortillas   Or you can bake or fry 6 inch corn tortilla 

2 pounds boneless skinless chicken thigh 

For marinade:

4 ozs lime juice 

8 ozs avocado oil 

1 teaspoon paprika

1 teaspoon granulated garlic 

1 teaspoon black pepper 

1 teaspoon sea salt 

For Sauce:

1 cup fresh cilantro 

3 cloves garlic

1 each Serrano pepper 

4 ozs red wine vinegar 

8 ozs extra virgin oil 

1 each shallot 

Blend in food processor 

For salad:

Chopped iceberg lettuce

Chopped red cabbage 

Chopped carrots 

Dress with EVO. Salt and Lemon

For topping:

8 ozs shaved cojita cheese 

Fresh chopped tomato 

Pickled red onions 

Pickled jalapeños 

Bunch of green onions 


Crispy tortilla chips ( Fritos )


1- Marinade chicken and grill till done 

2- Baste with marinade 

3- Chop Chicken and serve over salad on the tortillas 

4- Garnish 

5- Drizzle with sauce 

Serve with cold beer!!
