Today’s recipe is brought to you by the Letter G! Its all about Ginger!
For Chicken marinade:
1 tablespoon ground ginger
1/4 cup rice vinegar
1 tablespoon chopped fresh ginger
1/2 cup soy sauce
Mix, Marinate and refrigerate overnight
For Sauce:
1 big finger of peeled fresh ginger
1 clove garlic, mashed
1 bunch scallions, sliced thin
6 ozs soy sauce
3 ozs sesame oil
4 ozs peanut butter
4 ozs orange juice
1 tablespoon chopped fresh cilantro
Method:
1- In a sauce pot, sautée the garlic and ginger till it smells great
2- add orange juice and soy sauce
3- whisk in peanut butter
4- let simmer for 5 minutes
5- add sesame oil and stir in a remove from heat
For chicken garnish:
Cook chicken on hot grill or in broiler
Baste with sauce
When chicken is done, coat with sauce
And garnish with
1/2 cup toasted peanuts
4 fingers of fresh chopped cilantro
