Today, we are talking about Thanksgiving recipes!
Carrots Butterscotch
5 pounds of peeled delicious carrots
1 gallon water
1.5 cups sugar
2 pieces star anise
2 tablespoon kosher salt
2 each bay leaf
2 each kefir lime
1 Pound sweet butter
Method:
1- bring cut carrots, water, salt and sugar to a boil
2- add the star anise, bay leaf, lime leaf
3- Cook tilll super tender
4- in a pot, bring the butter to temp and slowly let turn brown, coaxing the nutty flavor from the butter
5- let the brown butter go on the fire till it starts to turn an Even darker brown.. This is caramelizing the milk in the butter and making it delicious
6- strain the carrots and place in a blender or food processor
7- slowly drizzle the butter into the carrots while blending
8- season with salt and white pepper
9- make sure its creamy and lovely...
Serve in a casserole dish...it's awesome!
