Grilled Whole Yellowtail Snapper
First, visit the Doris Italian Market seafood department! Have the fish monger gut and scale fish.
- Score fish with a sharp knife (cut slices into each side of fish)
- In cavity of fish put lemon slices and rosemary, sea salt, lemon pepper and a pat of butter (optional)
- Liberally sprinkle the fish with sea salt, lemon pepper and whatever other spices you want, squeeze of lemon and cover in olive oil
- Put fish on hot oiled grill, cook until done
- On one side, flip with two spatulas , squeeze of lemon, garnish with parsley.
Make a big salad or some asparagus, I like them grilled with kosher salt and olive oil. Serve with your favorite white wine, like a New Zealand Sauvignon Blanc, and enjoy!
