Grilled Whole Yellowtail Snapper

First, visit the Doris Italian Market seafood department! Have the fish monger gut and scale fish.

  1. Score fish with a sharp knife (cut slices into each side of fish)
  2. In cavity of fish put lemon slices and rosemary, sea salt, lemon pepper and a pat of butter (optional)
  3. Liberally sprinkle the fish with sea salt, lemon pepper and whatever other spices you want, squeeze of lemon and cover in olive oil
  4. Put fish on hot oiled grill, cook until done
  5. On one side, flip with two spatulas , squeeze of lemon, garnish with parsley.

Make a big salad or some asparagus, I like them grilled with kosher salt and olive oil. Serve with your favorite white wine, like a New Zealand Sauvignon Blanc, and enjoy!
