Linguine Pescatore

Linguine Pescatore

Serves: 4

Ingredients:

  • 1 quart favorite tomato sauce
  • 2 pound cleaned mussels
  • 32 little neck clams
  • 2 pounds cleaned and cut into rings calamari
  • 1 pound cleaned shrimp
  • 2 tablespoon fresh basil
  • 2 tablespoon fresh parsley
  • 1 teaspoon crushed red pepper
  • 1 teaspoon tomato paste
  • 4 ozs olive oil
  • 2 cloves of garlic. Mashed
  • 1 cup white wine

Method:

  1. in a large sauté pan, heat oil and add garlic and cook till tender
  2. add tomato paste and red pepper flakes
  3. cool over medium heat for 3-5 minutes
  4. add the clams and the wine and cover
  5. cook for 4 minutes, add mussels
  6. cover for 2 minutes
  7. add shrimp and calamari and cover
  8. cook low heat for 5 minutes
  9. season to taste with salt and pepper; add all the herbs
  10. serve with linguine pasta or fresh garlic bread
