Dr Stein’s Famous Tuna Mediterranean style
4 each 8 oz tuna filet
Cracked sea salt cracked pepper smoked paprika
4 each long stemmed artichoke hearts from Doris
1 each red pepper
1 each fresno pepper
1 bunch fresh basil
2 lemons
4 ozs olive oil
1 teaspoon roasted garlic cloves
Method
- Rub the fish with the salt and spices and some olive oil
- Grill over medium heat till rare
- Grill the red pepper and slice
- Toss with the artichokes, basil, fresno, lemon juice, and half the olive oil
- Slice the tuna, serve over the artichoke salad
- Drizzle with olive oil and squeeze of lemon
