Snapper or Dolphin Castronovo
Ingredients:
Fresh fish filets
Cherry tomatoes
White onion
Garlic
Fresh rosemary
Olive oil
White wine
Salt
pepper
Jalapeño (seeded, chopped)
Capers
Limes
Sauté garlic, half onion, capers, jalapeño, tomato's (halved) lime juice and Oregano in oil, until vegetables begin to sweat and break down, add white wine.
Set aside.
Spoon some into roasting pan.
Place filets on top of mixture,
place in oven 450 until done 15-20 min)
