Chicken & Shrimp New Orleans Style
1 pound Chicken Thighs, diced
1 pound peeled and deveined shrimp
1 each red pepper, diced
1 each green pepper, diced
4 ribs celery, diced
1 Vidalia onion, diced
3 cloves garlic, smashed
4 tablespoons of Cajun spice
4 ozs Papas Pilar blonde rum
4 tablespoons soft butter
Juice of one big fat lime…
Method:
- Dust the chicken and shrimp with Cajun seasoning
- In a pan, add grapeseed oil and brown the chicken in the oil, remove and put on side
- Add the onions, celery, garlic and peppers and sweat
- Add the shrimp and brown
- Add the chicken back to the pan and deglaze with Papas Pilar!
- Add the lime juice, the butter and swirl in the pan
Serve over dirty rice….and enjoy.
