I've hooked up with Quick Weight Loss Centers and I've gone Keto! Here's my weekly update:
I started on January 7th, so that's 50 days in and today I hit 35 pounds lost! At this point, I'm in a bit of a groove. My only issue, I'm stalling on the weekends. Not sure why, perhaps because my schedule and eating times are completely different. My coaches and I are still trying to figure that one out. Regardless, I'm freaking thrilled at this point!
One of my food staples are Coconut Pancakes! I'll grab a few, throw them in a Tupperware and tear through them during the 8:05 commercial break. Here's the recipe, it's super easy!
3 Large Eggs
2 Tbsp Coconut Flour
6 Tbsp Coconut Milk
½ Tsp Baking Powder
1 Pinch of Sea Salt
1 Tbsp Coconut Oil
Mix the first 5 ingredients together and then ladle into a medium heat pan with coconut oil. Boom, you got breakfast!
