Pauly’s Poke
1 lb fresh sushi grade tuna or tuna that I caught with my Son this week!
Chopped into small one inch chunks
Toss with some sesame oil
Black sesame seeds
Ponzu sauce
Soy sauce
Sriracha sauce for heat
Scallions
Cilantro
Mix and chill! Serve over rice, cut up an Avocado if you have one and it will blow you away!
The Kings Smoked Big Green Egg Kingfish
About 10 lbs of fresh kingfish caught right out front on the Hectic Daze V, cleaned and filleted.
Soak for 24 hours in a bribe of apple juice, brown sugar kosher sea salt and hot sauce
Heat big green egg and hold it at between 170-200 degrees, cook indirectly with wood chips on the egg and serve! Makes a killer dip or serve plain with some cocktail or hot sauce
