Ingredients:
- Fish…1.5-2lbs Mahi Mahi or snapper cut into bite size chunks
- Leeks..about 2 nice size or two yellow onions, chopped
- Red potatoes cut into 3/4 inch cubes
- Heavy cream (two cups)
- Butter: some
- Salt and pepper
- Thyme : teaspoon
- White wine 1/2 cup…or more
- Olive oil : couple of tablespoons
- Clam juice…2 cups
- Bay leaf
Sauté the chopped leeks in the olive oil and butter until they are opaque
Add wine and cook down until half is gone
Add potatoes, clam juice, bay leaf, salt pepper and thyme for taste
(Juice should just cover the potatoes)
Bring to a simmer, then lower the heat to medium and cook, covered, until the potatoes are almost done, about 10-15 minutes.
Heat the cream in a separate pot but don’t boil it!
Add the fish and the heated cream
Cook on low about ten minutes
Again, don’t boil it..cook until fish looks done, top with fresh parsley and WAIT! At least 30 mins before serving
